HEIRLOOM RAISIN MUFFINS | |
1 c. raisins 1 c. water 1/2 c. soft butter 2 eggs 1 1/2 c. sifted flour 1 tsp. baking powder 3/4 c. sugar Combine raisins and water in saucepan and bring to a boil. Reduce heat and simmer, covered, for 20 minutes. Drain and reserve liquid and add enough water to make 1/2 cup liquid. Cool. Cream together butter and sugar until fluffy. Add eggs and beat 2 minutes. Sift together flour and baking powder and add to sugar mixture along with the 1/2 cup raisin liquid. Beat well. Stir in raisins and spoon into greased muffin tins, filling 2/3 full. Bake at 400 degrees for 18 minutes. Makes 12 muffins. |
