OATMEAL RAISIN MUFFINS 
1 c. rolled oats
1 c. skim milk
1/2 c. butter, melted
1 egg, slightly beaten
1/4 c. brown sugar
1/2 c. raisins
1 c. whole wheat flour
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda

In a large bowl, soak the oatmeal in milk for an hour. Add melted butter, egg, brown sugar and raisins. Stir until well mixed.

In a medium bowl, mix dry ingredients together. Add to the oatmeal mixture. Stir until flour is moist. Batter should be lumpy.

Spray muffin pans with vegetable cooking spray or line with paper liners. Fill muffin tins 2/3 full with batter.

Bake at 400 degrees for 15 to 20 minutes, or until done. Makes 12 medium sized or 24 mini-muffins.
