OATMEAL RAISIN MUFFINS 
1/2 c. raisins
1 1/2 c. pancake mix
1 c. oatmeal
1/2 c. brown sugar
1 1/2 tsp. cinnamon
1 egg
1/4 c. oil
1 c. milk

Heat oven to 425 degrees. Grease bottom of pan only. Mix pancake mix, oats, sugar and cinnamon. Add remaining ingredients. Mix until dry ingredients are moistened. Fill muffin pans 3/4 full. Bake 15 to 20 minutes.

Variations: Substitute 1/2 cup chopped apples for raisins or 1/2 cup blueberries for raisins.
