BRAN AND RAISIN MUFFINS (FAT FREE) | |
1/2 c. whole wheat flour 1/4 c. + 3 tbsp. all-purpose flour Sugar substitute = 6 tsp. sugar 1 tbsp. baking powder 3 oz. unprocessed bran 1 1/2 oz. uncooked quick cooking rolled oats 3/4 c. buttermilk 1/4 c. apple juice 2 tbsp. applesauce 2 egg whites 2 1/2 tsp. honey 1/2 c. hot water 1/4 c. + 2 tbsp. raisins Preheat oven to 400 degrees. In large bowl sift together first 5 ingredients. In blender combine buttermilk, apple juice, oil, egg whites and honey; process until combined. Add dry ingredients. Stir until moistened, then stir in raisins and hot water. Spray a 12 muffin cup pan with non-stick cooking spray; fill each with 1/4 cup batter. Bake 20 minutes or until set and lightly brown on top. Makes 12 servings. 121 calories. Instead of buttermilk substitute plain yogurt. |
