TAMMY'S LEMON GINGER SCONES 
4 1/2 cups Bisquick baking mix
1/2 cup brown sugar, firmly packed
1 cup crystallized ginger, finely chopped*
1 tbsp. lemon rind, grated
1 egg, beaten
1 cup buttermilk
1 egg white
1 tsp. water

Note: A food processor works great for chopping up the ginger.

Combine Bisquick baking mix and brown sugar, stirring well. Stir in ginger and lemon rind. Combine egg and buttermilk; add to flour mixture, stirring until dry ingredients are moistened.

Divide dough into 2 halves and pat into balls and place dough onto a lightly floured surface. Pat the dough into circle 1/2-inch thick. Cut circle into 6 pie shaped pieces. Place the scones 1-inch apart on a greased baking sheet. Combine egg white and water; brush tops of scones.

Bake at 400°F for 8 to 10 minutes. Let the scones cool completely before glazing.

Makes 1 dozen large scones.

GLAZE (optional):

confectioners' sugar
vanilla extract
milk

To make the glaze mix confectioners' sugar, vanilla extract and milk until glaze is thick not runny. Then drip the tops of each scone into the glaze and allow to dry.
