ORANGE-RAISIN OATMEAL SCONES 
1 1/2 cup + 2 tbsp. all-purpose flour (I use unbleached white wheat flour)
2 cups rolled oats (quick-cooking)
4 tsp. baking powder
1/2 tsp. salt
1/2 to 1 cup raisins, or to taste
1/2 tsp cinnamon
1 egg, beaten
1 (10 oz.) jar orange marmalade
1/3 cup olive, peanut or corn oil

Preheat oven to 425°F. Lightly grease a baking sheet (use olive oil spray).

Mix all dry ingredients together. Mix all liquid ingredients together. Combine all.

Sprinkle some flour on the counter and dump the dough onto it. Press it out to about 3/4-inch thick using a little additional flour as needed to keep hands and counter from sticking. Then use a cutter to cut out a dozen scones.

Bake at 425°F for about 15 minutes.

Makes 1 dozen.
