PASTA CONAMORE 
12 oz. ziti or penne pasta, cooked
3 oz. olive oil
2 bunches scallions (chopped)
1 lg. ripe tomato (chopped)
1 sm. red pepper (chopped)
2 tbsp. capers (optional)
1 tbsp. dried basil
1 c. Ricotta cheese
4 oz. Mozzarella cheese (shredded)

Cook onion in olive oil along with tomato and pepper. Let it get soft. Add basil and capers when it becomes soft. Add Ricotta and Mozzarella cheeses. Put pasta on plate, sprinkle with Mozzarella cheese, pour sauce over. Serve.
