FRESH TOMATO PASTA 
6-7 fresh ripe tomatoes
4 cloves garlic, chopped
1 lb. rotelles
8 leaves basil
8 oz. ricotta cheese
Black Green olives
3/4 c. olive oil
Fresh ground pepper

Cook macaroni; drain. In bowl, mince tomatoes fine, add 4 cloves garlic and chopped basil leaves, and olive oil. Let sit for a while, add macaroni, turn into tomatoes add ricotta cheese, olives and a touch of Italian cheese and add black pepper.
