PASTA WITH FRESH TOMATO &
BROCCOLI
 
1/2 lb. penne
2 c. broccoli, cut into bite-sized pieces
2 tbsp. olive oil
2 cloves garlic, minced
Hot pepper flakes to taste
4 tbsp. chopped fresh basil
8 dried black olives, pitted & sliced
2 c. fresh plum tomatoes, sliced into wedges
2 tbsp. chopped parsley for garnish

Bring large pot of water to boil and add pasta. Cook according to package directions, stirring occasionally. Steam broccoli.

Meanwhile, heat oil in medium skillet. Add garlic, hot pepper flakes, olives and tomatoes. Cook over high heat for several minutes, stirring often. Add basil, cover and simmer. When broccoli is tender, add to sauce. Continue cooking pasta until al dente. Pour sauce over pasta. Garnish with parsley.
