ZUCCHINI MOUSSAKA 
3 zucchini, 1/4 inch slices
1 onion, sliced
2 tbsp. oil
1 lb. hamburger
1 (8 oz.) tomato paste
1 clove garlic, minced
1/2 tsp. salt
1/4 tsp. cinnamon
Dash basil, oregano
1 egg
1 c. cottage cheese
1/2 c. Parmesan cheese

In heavy skillet, cook zucchini and onion in oil. Remove from skillet and place in bottom of shallow 2 quart baking dish.

In same skillet cook hamburger until changes color. Pour off fat. Stir in tomato paste, garlic and seasonings. Spoon over zucchini.

Blend egg, cottage cheese and 1/4 cup Parmesan cheese. Pour mixture over meat. Sprinkle remaining 1/4 cup Parmesan cheese over top. Bake at 350 degrees for 30 minutes. Serves 4-6.
