ZUCCHINI MOUSSAKA 
3 zucchini, cut in 1/4 inch slices
1 onion, chopped or sliced
2 tbsp. vegetable oil

1 lb. lean ground beef
1 (8 oz.) can tomato sauce
1/4 tsp. cinnamon
1 tsp. salt

1 c. cottage cheese
1 egg, beaten
1/4 c. Parmesan cheese or slices of Mozzarella for variety.

In skillet, brown squash and onion lightly, in oil. Place in baking dish. Brown beef, pour off fat. Stir in tomato sauce, garlic, sat and cinnamon. Spoon over squash and onion. Blend egg and cottage cheese. Spoon over over meat. Sprinkle Parmesan cheese on top and bake at 350 degrees for 30 minutes or more (45).
