GAZPACHO SOUP | |
1 (18 oz.) can vegetable juice cocktail 2 c. beef broth 1 1/2 c. green pepper, chopped 1 med. tomato, peeled and chopped 3/4 c. onion, chopped 1/3 c. lemon juice 1 tbsp. oil 1 tbsp. paprika 1 clove garlic, minced 1 tsp. salt 1/8 tsp. pepper Combine all ingredients in blender and process 5 or 10 seconds. Cover and chill 6 hours or more. (Excellent summer soup). |
