BANANA BARS 
1/4 c. shortening
1 c. sugar
2 eggs
1 c. mashed bananas (2 to 3)
1 tsp. vanilla
2 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. salt

Heat oven to 350 degrees (medium). Grease a jelly roll pan, 15 1/2 x 10 1/2 x 1 inch. Mix shortening, sugar, eggs, bananas, and vanilla thoroughly. Measure flour by dipping method or by sifting. Blend dry ingredients; stir into banana mixture. Spread in prepared pan. Bake 20 to 25 minutes or until golden brown. Makes 3 1/2 dozen bars.

Note: If you use self-rising flour, omit baking powder and salt.

Better with raisins, dates, and chocolate chips.
