CHICKEN CASSEROLE 
2 pkgs. boned, skinned chicken breasts, halved
1 can Del Monte Italian style stewed tomatoes
2 c. cooked rice (Minute)
1 lg. bag shredded Mozzarella cheese
Salt to taste

Place halved chicken breasts on bottom of oblong baking dish. Salt to taste and bake, uncovered, 30 minutes at 350 degrees. Cook minute rice and slightly pulse in blender, stewed tomatoes. Place tomatoes, then rice and last cheese on chicken and return to oven 20 to 25 minutes longer. (I often substitute broccoli for tomatoes and proceed as above.)
