LUNCHEON LOAF | |
1 1/2 lb. finely ground fresh pork 1 med. onion, finely chopped 1 egg 1/3 c. cream of rice cereal 1/2 c. milk or water 1/2 tsp. seasoned salt 1/4 tsp. black pepper Mix first 3 ingredients thoroughly; add all other ingredients and mix again. Turn mixture into a greased loaf pan and bake 1 1/2 hours in a preheated 350 degree oven. After first hour of baking, remove form oven, pour off fat, and add water to 1 inch from the bottom of the pan. Cover with foil to keep from browning too much if it is necessary and continue baking. Remove from oven and let stand for 15 minutes. Loosen sides of loaf, remove from pan onto a sheet of foil and chill thoroughly in the refrigerator. Slice thinly for luncheon meat or cut into 1 inch cubes for hors d'oeuvres or to carry in lunch boxes for finger food. |
