PEANUT BUTTER CRISS CROSS
COOKIES
 
1 1/2 c. flour
1/2 tsp. baking soda
1/2 c. butter
1 c. peanut butter
1/2 c. packed brown sugar
1/2 c. sugar
1 lg. egg
1 tsp. vanilla extract

Heat oven to 375 degrees. Mix flour and baking soda. Beat butter and peanut butter in a large bowl with electric beater until creamy. Add sugars and beat until fluffy. Beat until fluffy. Beat in egg and vanilla until well blended. With mixer on low speed gradually add flour mixture. Beat just until blended. Roll heaping teaspoons dough into balls. Place 1 1/2 inches apart on ungreased cookie sheet.

Flatten with fork, making criss-cross design. Bake 10-12 minutes until browned. Cool 1 minute before removing. Makes 60.
