ZUCCHINI SALAD | |
3 med. zucchini 1/3 c. salad oil 1/3 c. cider vinegar 1/4 c. sweet relish 1 clove garlic, split 2 tbsp. minced onion 2 tbsp. chopped pimiento 1 tsp. salt 1/8 tsp. pepper Slice zucchini into 1/4" rounds. Combine remaining ingredients. Pour over zucchini. Cover and refrigerate several hours or overnight. Makes 6 servings or 4 cups. |
