1 sm. box graham crackers (33)
1 cube butter
2 c. applesauce
1 can sweetened condensed milk
1 lemon rind and juice
3 eggs, separated

Crush the graham crackers into fine crumbs and combine with butter. Use 3/4 of mixture for bottom of springform pan and save rest for the top of cake. Combine applesauce, milk, rind, juice and egg yolks; blend well. Beat egg whites to soft peaks and fold into applesauce mixture. Pour into pan and top with remaining crumbs. Bake at 350 degrees for 35-45 minutes.
