PORK ROAST AND POTATO DUMPLINGS 
Pork roast
1 lg. onion
Day old bread
6 potatoes
1 lg. egg
1 tsp. salt
2/3 c. flour

Brown pork roast in skillet in a little grease to brown on all sides. Salt and pepper pork, add onions and brown a little more. Place in roasting pan. Add about 1 cup of water and bake at 350 degrees until tender, adding more water when needed - approximately 2 hours. Make a flour and water mixture and add to juice from meat to make gravy.

Potato Dumplings - (makes 10 dumplings) - break up into small pieces a heaping bowl of bread, grate about 6 potatoes in large cake pan, add 1 egg, 1 teaspoon salt, then scant 2/3 cup flour on top of this and mix, then add bread pieces and form into balls (taste and season). Drop them into boiling salted water in an open kettle, boil for 30 minutes. Remove from water and serve immediately with pork roast and gravy.
