EASY GARDEN VEGETABLE PIE | |
2 c. chopped fresh broccoli or cauliflower or 1 (10 oz.) pkg. frozen, thawed and drained 1/2 c. chopped onion 1 1/2 c. milk 3/4 c. Bisquick 3 eggs 1/2 c. chopped pepper 1 c. shredded Cheddar cheese 1 tsp. salt 1/4 tsp. pepper Heat oven to 400 degrees (if using fresh broccoli, heat 1 inch salted water, bring to boil. Add broccoli, cover and bring to boil, cook about 5 minutes; drain thoroughly). Mix broccoli, onion, green pepper and cheese in a lightly greased 10 inch pie plate. Beat remaining ingredients until smooth, about 1 minutes with hand mixer. Pour into pie plate. Bake until golden brown and knife inserted comes out clean, about 40 minutes. Let stand 5 minutes before cutting. |
