BAKED ZUCCHINI 
2 lb. zucchini, peeled and sliced or cubed
1 lb. tomatoes, sliced
2 sm. onions, chopped
1 c. green peppers, chopped; optional
1/4 c. butter
2 c. shredded cheese
1 1/2 to 2 c. bread crumbs, or stuffing

Saute zucchini, onions, and green pepper in butter. Layer 1/3 bread crumbs, zucchini mixture, tomato slices and cheese in 9 x 13 pan. Bake at 350 degrees for approximately 45 minutes.
