ZUCCHINI - HAM DELIGHT 
1 lb. thinly sliced zucchini
2 1/2 tbsp. flour
2 tbsp. butter
1 c. milk
1/2 c. shredded Cheddar cheese
1 to 2 c. cooked ham, chopped
1 med. onion, sliced
Salt and pepper
1 c. bread crumbs mixed with 3 tbsp. melted butter
1/4 c. Parmesan cheese

Cook zucchini in boiling salted water about 5 minutes; drain. Add flour to butter and stir in milk and cheese. Cook until thickened and add ham.

Place zucchini in a shallow 1 1/2-quart greased baking dish. Arrange onion rings over zucchini. Salt and pepper. Spoon sauce over vegetables. Mix crumbs with Parmesan and sprinkle over top.

Bake in a preheated oven at 350 degrees for 20 minutes.
