3 c. diced zucchini
1 lg. chopped onion
1/2 c. grated Parmesan cheese
1/2 c. grated Cheddar cheese
1/2 c. salad oil
1 c. Bisquick
4 Egg Beaters
3-4 tbsp. chopped parsley
1/2 tsp. salt

Grease 9 x 9 inch baking dish or pie plate. Combine all ingredients, mixing until zucchini is just coated with batter. Bake at 350 degrees for 35-40 minutes or until lightly browned.
