MY AUNT RUTH'S WALNUT CAKE | |
1/2 c. butter 1/2 c. shortening 2 c. sugar 5 egg yolks 1 tsp. vanilla 5 egg whites 2 c. plain flour 1 tsp. baking soda 2 c. buttermilk 1 c. coconut 1 c. black walnuts, chopped Cream butter and shortening well, gradually add sugar, beat until light and fluffy. Add egg yolks and vanilla. Sift flour and soda, add to batter with buttermilk. Stir in nuts and coconut. Beat egg whites until stiff. Fold into batter. Makes 3 (9 inch) layers. Bake at 350 degrees for 25 minutes. ICING: 1 (8 oz.) pkg. cream cheese 1/2 stick butter 1 box powdered sugar 1 tsp. vanilla 1/3 c. walnuts, well chopped 1 tsp. lemon juice Mix all ingredients together until very smooth. More nuts may be sprinkled on top. |
