BACKYARD KABOBS
2 lb. beef, cut into 1" cubes
2/3 c. salad oil
1/4 c. soy sauce
1/3 c. molasses
2 tbsp. vinegar
2 cloves garlic, minced
1 tsp. sugar
1 tsp. ginger
1 lg. onion, cut into cubes
Cherry tomatoes (optional)

Combine all ingredients except beef to make marinade. Pour over beef cubes and marinate at least 2 hours, turning occasionally. Best if marinated longer, even overnight as it tenderizes the beef.

Place meat into bamboo skewers with slices of onion and cherry tomatoes in between. Broil over barbecue or under broiler for about 5 minutes on each side, or until desired degree of doneness, using marinade to baste.

Hints: Beef and onions are best on the skewers because they won't cook as quickly. Consider making extra skewers with just tomatoes, adding zucchini and bell peppers and broiling briefly as a side dish. If you're using a more expensive cut of beef such as sirloin, you don't need to marinate as long. But marinating overnight makes even inexpensive cuts of beef tender. Goes well with fruit salad and crunchy sour dough bread, plain or garlic.
