BROWN RICE PILAF 
2 c. brown rice
2 1/2 c. chicken stock, defatted
1 tbsp. butter
1/4 tsp. garlic powder
Dash of white pepper
Dash of black pepper
1/4 c. green pepper, chopped
1/4 c. onion, chopped
1/4 c. celery, chopped
2 tbsp. pimento
Nonstick cooking spray

Spray baking dish with a nonstick cooking spray. Add rice to baking dish. Combine chicken stock, butter, garlic powder, and peppers. Add to rice. Stir in green pepper, onion, celery, and pimento. Cover with aluminum foil. Bake in 350 degree preheated oven for 50 minutes. Serves 8.
