OATMEAL SANDWICH COOKIES 
2 c. butter
2 c. white sugar
2 c. brown sugar
2 tsp. vanilla
4 eggs
3 c. flour
2 tsp. salt
2 tsp. baking soda
6 c. quick-cooking oatmeal
1 1/2 c. flaked coconut
1 c. raisins

Cream butter, sugars, and vanilla well. Add eggs, one at a time. Beat well. Sift flour, salt, and soda together. Add to first mixture. Now, with your hands, work in oatmeal, coconut, and raisins. Mix together well. Make out into balls about size of English walnuts. Bake at 350 degrees for about 10 to 15 minutes on greased cookie sheet. Cool.

FILLING:

5 tbsp. flour
1 c. milk

Mix in saucepan. Make a paste and cook until thick, stirring constantly. Add:

1 c. Crisco
2 tsp. vanilla
1 c. white sugar
1/4 tsp. salt

Cream together and mix with paste mixture. Whip well until light and fluffy. Put cooled cookies together with filling. Makes about 75 double cookies.
