MUSHROOM TOPPED PORK CHOPS 
4 to 6 boneless chops
1 tbsp. butter
1 c. finely chopped mushrooms
1 tbsp. butter
1/2 c. finely chopped parsley
1/3 c. chopped red onion
1 egg
Salt and pepper
3 tbsp. grated Cheddar cheese

Heat butter in a pan. Brown chops on both sides. Place in oven-proof dish. Saute the mushrooms in butter until no longer moist. Cool. Mix together mushrooms, parsley, onion, egg, salt, and pepper. Place filling on top of chops. Bake at 350 degrees for 40 minutes. Sprinkle with cheese after 30 minutes. Juice should run clear when pierced with fork.
