OLD TIME JAM CAKE 
4 eggs, separated
1 c. sugar
1 c. dark brown sugar
1 c. butter
1 tsp. cinnamon
1 tsp. allspice
1 tsp. nutmeg
1 tsp. cocoa
1 c. blackberry jam
1 tsp. baking soda
1 c. seedless raisins
3 c. flour
1 c. buttermilk

Beat egg yolks until light; pour in soda, sugars, and butter. Add spices and cocoa. Beat egg whites until stiff. Fold into mixture. Add jam and raisins, then slowly add the flour and buttermilk alternately, beginning and ending with the flour. Bake in a large greased and flour dusted pan or in 3 layers. Bake at 350 degrees for 60 to 75 minutes. If making 3 layers, it will be done a lot sooner and you can tell they are done when they begin to pull away from the sides. Don't overcook.
