CARROT COOKIES 
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1 c. shortening
1/4 c. sugar
1 c. grated raw carrots
1/2 tsp. orange extract
1 egg

Mix flour, baking powder and salt. Cream shortening and sugar. Add grated carrots, flavoring and well beaten egg. Work in dry ingredients. Drop by spoonfuls on well greased cookie sheet. Bake in moderately hot oven, 400 degrees for 10-12 minutes. Yields 3 dozen.
