1 c. cooked carrots
3/4 c. butter
3/4 c. sugar
1/2 tsp. salt
2 tsp. baking powder
2 c. flour

ICING:

1 tbsp. orange rind
1 1/2 c. powdered sugar
Juice of 1 orange

Mash carrots. Mix all ingredients. Drop by teaspoon onto greased cookie sheet. Bake at 350 degrees for 8-12 minutes. Makes 3 dozen. Frost with icing while still warm.
