CARROT COOKIES 
1 1/4 c. shortening
1 1/2 c. sugar
2 eggs
1 tsp. vanilla
4 tsp. baking powder
Pinch of salt
4 c. flour
2 c. carrots, cooked & mashed

Cream together shortening, sugar, eggs and vanilla. Add dry ingredients and carrots. Drop on greased cookie sheet. Bake at 350 degrees for 12 to 15 minutes. While they are warm, frost.

FROSTING: Mix 2 cups powdered sugar, 1 tablespoon and 1 teaspoon orange rind and squeezed orange juice.
