CARROT COOKIES 
2 lg. carrots, cooked & mashed (1 c.)
1 c. butter
3/4 c. sugar
2 eggs
2 1/2 c. flour
2 tsp. baking powder
3/4 tsp. baking soda
1/2 tsp. vanilla

ORANGE FROSTING:

3 tbsp. butter
2 tbsp. orange juice
1 tbsp. lemon juice
2 to 2 1/2 c. powdered sugar

Preheat oven to 350 degrees. Boil carrots 30 minutes. Measure out 1 cup. Cream together butter, sugar, eggs, and vanilla. Stir in carrots. Mix well. Mix dry ingredients in separate bowl. Gradually add dry mix to creamed ingredients. Mix well. Bake 10 to 12 minutes.

FROSTING: Combine butter with juices and gradually stir in sugar until smooth. Frost cookies after they have cooled down.
