CARROT COOKIES 
3/4 c. flour
3 tbsp. dark brown sugar
1/2 tsp. baking powder
1/4 tsp. baking soda
3 tbsp. butter, soft
1 egg
1 tsp. vanilla
1 c. grated carrots, raw

Preheat oven to 375 degrees. In large bowl, mix all ingredients, except carrots, until smooth. Stir in carrots. Drop mixture, 1 tablespoon at a time onto a greased cookie sheet. Bake 10 minutes.
