TOASTED PECAN PUDDING 
1 can coconut
1 c. flour
1/4 c. brown sugar
1 stick butter
1 pkg. pecans

Mix together in large pan (save a few crumbs for the top) and bake in at 325 degrees until brown. Stir often while baking. Cool.

2 pkg. vanilla instant pudding
2 2/3 c. milk
2 c. Cool Whip

Add pudding mixture and top with reserved crumbs. Chill.
