ORANGE NUT MUFFINS | |
1/2 c. shortening 3/4 c. sugar 2 eggs, separated 1 1/2 tsp. sifted flour 1/2 tsp. salt 1/4 tsp. mace (optional) 1/3 c. orange juice 1/4 c. milk 2/3 c. chopped nuts 1 tsp. grated orange rind Cream shortening, sugar, and egg yolks together. Gradually add powdered ingredients alternately with liquids. Add orange rind and nuts. Beat egg whites until stiff; fold into mixture. Bake at 350-375 degrees for 20 minutes. |
