ORANGE ZUCCHINI BREAD 
1 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
3/4 c. sugar
1/2 c. oil
2 eggs
1 tsp. vanilla
1 c. grated zucchini
1/2 c. chopped nuts (optional)
1 1/2 tsp. grated orange peel

Combine first 6 ingredients and set aside. Mix sugar, oil and eggs together. Add vanilla, grated zucchini, and orange peel and nuts, if desired; mixture should be coarse, not smooth.

Pour into greased loaf pan and bake at 325 degrees for 35 minutes or until knife comes out clean from center. Enough for 1 loaf.
