KAREN'S SCALLOPED POTATOES 
6 med. potatoes
3 tbsp. butter
2 tbsp. enriched flour
3 c. milk
1 tsp. salt
1/4 tsp. pepper
2 tbsp. chopped onions

Peel potatoes and slice thin. Make white sauce of butter, flour, and milk. I add 1/4 to 1/2 grated cheese to the sauce. Put half of the potatoes in a 2 quart casserole. Cover with half the onions, seasonings, and sauce. Add remaining potatoes, onions, seasonings, and then cover with remaining sauce. Cover and bake in moderate oven at 350 degrees for 1 hour. Uncover and continue baking until brown. Serves 4 to 6.
