POTATO - CHIP COOKIES 
1/2 c. butter, room temperature
1/3 c. granulated sugar
3/4 tsp. vanilla extract
1 c. all-purpose flour
1/3 c. crushed potato chips
1/3 c. chopped walnuts or pecans
1 tbsp. granulated sugar
Powdered sugar

Preheat oven to 350 degrees. In a medium bowl, beat together butter, 1/3 cup granulated sugar, and vanilla until light and fluffy. Add flour, beating until blended. Stir in potato chips and nuts. Shape into 1 inch balls. Place 3 inches apart on ungreased baking sheets. Flatten cookies with bottom of glass dipped in 1 tablespoon of granulated sugar. Bake 12 to 15 minutes or until edges are lightly browned. Remove cookies from baking sheets; cool on racks. While slightly warm, sift powdered sugar over tops. Makes 32 to 34 (2 inch cookies).
