MALFATTI (Naked Ravioli) 
1 pkg. frozen spinach
1 sm. tub Ricotta cheese
1 c. bread crumbs
2 eggs
1/2 c. Parmesan cheese (grated)
1 clove garlic

Cook spinach as directed and drain until dry. Rub clove of garlic in large bowl. Add all ingredients and mix well.

On WELL floured board, drop a handful and roll into 1/2 inch roll. (Roll with palm of hand.) Cut in 1 inch lengths.
