POTATO CHEESE BAKE 
4 to 5 lbs. potatoes with skins on, sliced raw
4 or 5 onions, sliced
1 lb. Velveeta cheese, diced
Salt & pepper to taste
1 stick butter (Can be omitted as it can get too greasy)

Bake covered at 350 degrees for 1 to 1 1/2 hours. May be prepared ahead and baked when needed. Potatoes will not darken.
