OUTRAGEOUS RIBS 
3-4 lbs. spareribs (Chinese style)
3/4 c. olive oil
1 lg. onion, chopped
1/2 c. red wine
2 lg. cans tomato sauce
2 lg. cans crushed tomatoes
1/4 c. chopped fresh parsley
1-2 cloves garlic, minced
1/2 c. Parmesan cheese
Salt and pepper to taste

Brown ribs in large skillet (using no oil or butter) on both sides; set aside.

In large saucepot, cover bottom with 3/4 cup olive oil. Saute chopped onion until soft. Pour in red wine. Saute together 1-2 minutes. Add canned tomato sauce and crushed tomatoes. Stir and simmer 2-3 minutes. Add parsley. Mix. Stir in minced garlic. Simmer a few minutes. Add browned ribs. Cover and simmer 1 1/2 hours. The last 30 minutes, uncover, sprinkle in 1/2 cup Parmesan cheese. Simmer for the remaining 30 minutes.

Serve with additional Parmesan cheese, over your favorite pasta. Mangia!
