CHARLIE'S PICKLE RELISH 
2 qts. coarsely chopped unpeeled cucumbers
4 c. chopped onions
2 green & 2 red bell peppers, chopped
1/4 c. pickling salt

Mix all ingredients in a large glass or ceramic bowl and cover with several trays of ice cubes. Let stand 2 hours. Drain, rinse well and rain again. Prepare a syrup of:

7 c. sugar
4 c. cider vinegar
2 tbsp. each mustard seed & celery seed

Bring this syrup to a boil and add the vegetables. Bring just to the boil again, and pack into hot jars. Seal and process in a boiling water bath for 10 minutes.
