HUEVOS RANCHEROS 
3 corn tortillas
1-2 tbsp. onions; optional
1/2 med. green pepper
2 tbsp. oil
1 tsp. coriander or cilantro (leaf or ground seeds)
2 eggs, beaten
Flour tortillas, small
Picante sauce, grated cheese, chopped tomatoes; optional

Cut up corn tortillas into short thin strips and saute in oil with onions, green peppers, and seasonings, stirring so that the tortillas absorbs the oil.

When the tortillas start to become crisp (this is the place to stop of you're not ready to eat now so turn off heat) add eggs and cook like scrambled eggs, stirring often. Heat and soften flour tortillas by gently steaming or in microwave. Serve by rolling eggs in flour tortillas with any or all of the toppings. Serves 2.

Since microwave ovens vary in power, you may need to adjust your cooking time.
