8 eggs 1/2 c. milk 1 tsp. chili powder 2 tbsp. butter 1/2 lb. shredded cheddar cheese 1 (10 oz.) can diced Rotel tomatoes, drained 4 flour tortillas Scramble eggs, milk and chili powder in skillet with butter. Meanwhile, warm tortillas in skillet over medium heat. Place warmed tortilla on plate; spoon 2 scrambled eggs on top followed by 1/4 of the shredded cheese and 1/4 of the tomatoes on top of the cheese. Do this for each tortilla. Then place each plate in microwave for about 30 seconds to help melt cheese. Serve immediately. Serves 4. |
