HUEVOS RANCHEROS 
8 eggs
1/2 c. milk
1 tsp. chili powder
2 tbsp. butter
1/2 lb. shredded cheddar cheese
1 (10 oz.) can diced Rotel tomatoes, drained
4 flour tortillas

Scramble eggs, milk and chili powder in skillet with butter. Meanwhile, warm tortillas in skillet over medium heat. Place warmed tortilla on plate; spoon 2 scrambled eggs on top followed by 1/4 of the shredded cheese and 1/4 of the tomatoes on top of the cheese. Do this for each tortilla.

Then place each plate in microwave for about 30 seconds to help melt cheese. Serve immediately. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
