ONION RINGS 
3 egg yolks
1/2 tsp. baking soda
2 c. buttermilk
4 lg. yellow onions in 1/4 inch slices
Salt
1 1/2 c. flour
1 1/2 tsp. salt
Vegetable oil for deep frying

Combine egg yolks, flour, soda, and salt. Beat together. Pour in buttermilk slowly, beating until smooth. Heat oil in deep fat fryer, at least 3 inches deep until 375 degrees. Separate onion slices into rings. Drop them in batter and then fry 7-8 rings at a time for 4-5 minutes until light brown. Transfer to paper towels. When all done, fry them again for a minute. Drain again and salt.
