LENTIL SOUP 
1 c. rice, cooked
1 lb. dried lentils
4 qts. water
2 celery stalks, diced
2 pieces Italian sausage, cut sm.
1 med. onion, cut sm.
2 med. carrots, diced
1 clove garlic, mashed
1/8 tsp. black pepper
1 1/2 tsp. salt
1 tsp. olive oil

Wash lentils, then drain. Bring water to boil. Add lentils, celery, carrots, sausage, garlic, pepper, salt and oil. Cook on low medium heat for 1 1/2 to 2 hours. May need more salt. Serve with or without rice.

Serves 6 to 8.
