ITALIAN POTATO CASSEROLE 
5 lg. potatoes
1 lg. onion, sliced
4 c. fresh green beans
1 (28 oz.) can pureed tomatoes
2 cloves garlic, pressed
2 tsp. Italian seasoning
Freshly ground pepper

Chop potatoes into large chunks and place in large casserole dish with onion and green beans. Mix pureed tomatoes with garlic and seasoning; pour over vegetables. Add ground pepper if desired. Bake at 350 degrees for approximately 1 1/2 hours. Check potatoes with a fork for softness. Makes 4 to 6 servings.
