ITALIAN POTATO FINGERS 
2 lg. baking potatoes
1 pkg. Italian salad dressing mix
1/2 c. butter, softened
1 c. Parmesan cheese

Microwave potatoes on high until partially cooked, about 6 minutes, cool. Combine butter and salad mix. Cut each potato lengthwise into 10 to 12 fingers. Spread cut side with butter mixture and roll in cheese. Bake 5 to 8 minutes, served with sour cream and chives.

Since microwave ovens vary in power, you may need to adjust your cooking time.
