CANADIAN CHICKEN 
8 oz. fresh mushrooms
8 boned, skinned chicken breast halves
1 bunch broccoli flowerets
8 slices Swiss cheese
8 slices Canadian bacon
1 1/3 c. rice
1 can chicken broth soup
1 can French onion soup
1/2 stick butter, chunked

Bake chicken in olive oil on cookie sheet at 450 until lightly browned (about 10-15 minutes). Steam broccoli and set aside. Wash and dry mushrooms, slicing larger ones in half.

In casserole dish mix rice, soups and chunks of butter. Transfer chicken to dish. Bake covered for 30 minutes. Add mushrooms and broccoli, fitting them in between chicken. Bake additional 15 minutes. Uncover and place slice of bacon, then cheese on each breast. Recover and cook until cheese melts (about 10 minutes).
